We've been working with Wilton's coffees from his project - Finca Paraíso 92 - ever since our founder Ian one of his Pink Bourbons to win the UK Barista Championship last year.

Since then, we've been amazed at Wilton's work, and have taken his coffee to 2 subsequent World Barista Championships, using a Yellow Bourbon from him in Ian's milk course to take 6th place this year.

So, when we heard Wilton was producing decaf, we were really excited.

This is by far the best decaf we've ever tasted, with lots of stonefruit, strawberry and tropical fruit. 

When we cup our whole range together, this is many people's favourite coffee, before we even announce it's a decaf.

Works well on espresso and filter.

Process: Special Process - Ethyl Acetate

Processing details:

1. Manual harvest.
2. Classification of the cherry by density and size.
3. Sterilisation of the cherry (with UV and Ozone).
4. Cherry fermentation for 48 hours.
5. During cherry fermentation, addition of specific yeast (Saccharomyces pastorianus) to enhance fruity notes.
6. Drying of the grain with controlled equipment for 88 hours at 40 degrees celcius.
7. Parchment removal.
8. The green coffee is immersed in ethyl acetate which is extracted from sugar cane.
9. After the ethyl acetate removes the caffeine, the coffee is dehydrated again until it reaches 10% moisture content..

Product information

Our coffee bags use eco paper, which can be processed like normal paper. Simply separate the tin tie from the bag, and put both straight into the recycling.
