This White Honey processed Gesha from Sebastian Ramirez was used by our founder, Ian Kissick, to take 1st place in the Irish Barista Championships and 6th in the World Barista Championships, as well as by our former GM, Haruka Nango, to take 2nd in the UK Barista Championships.

Sebastian is a fourth generation coffee producer, and runs the El Placer Farms Project in Quindio and Huila.

El Placer is known for innovation in post-harvest coffee processing, while standardisation enables extremely high consistency, overall yielding exceptional coffees which are very consistent.

Sebastian uses yeasts and lactic bacteria cultivated by El Placer's fermentation team to obtain unique flavour profiles.

This coffee exemplifies Sebastian's work, and displays beautiful floral characteristics, green tea notes, citrus and stone fruit.

Works great on espresso and filter.

Processing details:

1. Harvesting and Sorting
Harvesting and sorting the cherries, with 95% being fully ripe and 5% semi-ripe.

2. Fermentation
Phase 1: The cherries undergo anaerobic fermentation in 200-liter tanks for 48 hours at a constant temperature of 18°C, with CO2 injection.
Phase 2: The cherries are pulped and undergo 48 hours of dry fermentation. This is followed
by 48 hours submerged in water with an oxygen pump.

3. Drying Phase
First Phase: The coffee is dried in a canopy at 40°C and 25% humidity for approximately 20 days.
Second Phase: Additional drying in a parabolic dryer for about 5 days, all slow and controlled with shade cloth.

4. Packaging and Stabilisation
The coffee is packaged in Grain-Pro bags and stabilised for 15 days.

Product information

Our coffee bags use eco paper, which can be processed like normal paper. Simply separate the tin tie from the bag, and put both straight into the recycling.
