We've been working with Wilton's coffees from his project - Finca Paraíso 92 - ever since our founder Ian one of his Pink Bourbons to win the UK Barista Championship last year.

Since then, we've been amazed at Wilton's work, and have taken his coffee to 2 subsequent World Barista Championships, using a Yellow Bourbon from him in Ian's milk course to take 6th place this year.

This Castillo reminds us of strawberry lollypop, raspberry, vanilla and passionfruit. Makes for an exceptional espresso, and a delicious filter.

Process:

Processing details:

1. Manual harvest.
2. Characterisation of the cherry.
3. Classification of the cherry by density and size.
4. Sterilisation of the cherry (with UV and Ozone).
5. First phase of cherry fermentation for 52 hours in bioreactors with a relief valve at a temperature of 18oC.
6. During cherry fermentation, addition of specific yeast (Saccharomyces pastorianus) to enhance fruity notes.
7. Cherry pulping.
8. During cherry fermentation the mucilage is recovered. This is then added in to the second phase of fermentation after pulping.
9. Second phase of fermentation in mucilage for 48 hours at 21oC
10. Fermentation for 68 hours.
11. Washing of the grain with a thermal shock process (in order to fix the secondary aromas developed during the different fermentation phases), first: water at 40oC and second: water at 12oC.
12. Drying of the grain with controlled equipment for 48 hours at 38oC.

Product information

Our coffee bags use eco paper, which can be processed like normal paper. Simply separate the tin tie from the bag, and put both straight into the recycling.
